This dish is so hot & spicy (in a good way) it begs one to drink more beer! Beer is a great component to cook with - better than wine in my book - It can add an extra layering of flavor that wine simply can not compete with & using the Pale Ale is a perfect fit with it's tasting note components.
Recipe: Serves 3-5
4 boneless chicken breasts
2/3 cup Hops & Grain Pale Dog American Pale Ale
1/2 cup green onion - chopped
1/4 cup water
1/3 cup Sriracha “The Rooster” Hot Chili Sauce
3 Tbs chili powder
1 Tbs cayenne pepper powder
2 Tbs local honey
2 tsp powdered garlic
1/2 tsp salt
Creamy Dipping Sauce:
1 cup sour cream
1 Tbs milk
1 Tbs white vinegar
1 Tbs fresh parsley - chopped
1 Tbs fresh chives - chopped
1 Tbs fresh cilantro - chopped
1 Tbs fresh mint - chopped
pinch of salt
1/2 cup green onion - chopped
1/4 cup water
1/3 cup Sriracha “The Rooster” Hot Chili Sauce
3 Tbs chili powder
1 Tbs cayenne pepper powder
2 Tbs local honey
2 tsp powdered garlic
1/2 tsp salt
In a large mixing bowl, add water, sirahca sauce, green onion, chili powder, cayenne powder, honey, garlic & salt and slowly whisk together. Next, slowly pour beer into the hot pepper mix & continue to gently stir together. Once combined slowly pour half of the mixture into large ziplock bag & add chicken breast to the bag. Seal bag shut firmly & place into the refrigerator to marinate for 1-2 hours or overnight for stronger flavor. Cover the remaining sauce & refrigerate until ready to use. Once marinated, remove from the refrigerator & place onto a medium high grill. Cook chicken slices until tender but not over cooked - about 6-8 minutes per side - tip: chicken should be easy to lift when ready to turn. Brush chicken with remaining sauce during & after grilling to maximize spiciness. When chicken is cooked, remove from grill and let sit for a few minutes. Slice chicken into thin strips & serve with dipping sauce. Makes for a great appetizer or serve with salad, pasta or risotto.

1 cup sour cream
1 Tbs milk

1 Tbs fresh mint - chopped

In a small mixing bowl combine all ingredients together & serve as dipping sauce with the Grilled Hot & Spicy Chicken.
